Shaved Brussels Sprout Salad

1 tsp lemon zest
2 tbsp lemon juice
1 tbsp honey
1/2 tsp crushed red pepper
1/2 tsp salt
1/4 tsp pepper
1/4 cup evoo
one and a quarter lb brussels sprouts ends trimmed
1 cup red onion
1/2 cup walnuts (or other nut of choice), chopped
1Combine the first seven ingredients and whisk together until combined. Separately, add the brussels sprouts to a food processor to shred. Then transfer shredded brussels to a bowl, add onions & nuts & dress with dressing. It's that easy!
