These Spinach, Egg, and Cheese Breakfast Bites are perfect to make ahead and pop in when you're on the move! With 10 grams of protein and 130 calories each, they're a healthy way to start the day!

6 eggs 3/4 cup colby and monterey jack cheese, divided
1 cup spinach
1/4 cup water
1/4 teaspoon salt
1/4 teaspoon freshly cracked pepper
1Preheat oven to 350 F. Crack eggs into a bowl and whisk until thoroughly combined. Roughly chop spinach.
2Add 1/2 cup of cheese, water, salt, pepper, and spinach to the eggs and combine.
3Generously spray muffin tin with cooking spray. Spoon mixture into each until evenly distributed. Top with remaining cheese.
4Cook for 12-15 minutes, until toothpick comes out clean. Let cool and pop into tupperware or plastic bag to store in refrigerator.
