Savory Breakfast Muffins

Preheat oven to 350 F. In a lightly sprayed muffin tin, add spinach, chopped tomato, egg whites and top with cheese. Sprinkle with salt and pepper. Pop into oven for 15-18 minutes. 2/3 - 1 cup spinach

1 roma tomato, chopped

2 cup egg whites

mozzarella or non dairy cheese (optional)

salt and pepper, to taste

sriracha (optional)

olive oil/ coconut oil spray

Preparation
