Quick Sautéed Collards W/ Garlic & Sherry
Not your mamma's collards...but BETTER!! ....SHHHHH, but don't tell her!

8 cups fresh collard greens, picked and chopped (cleaned & cut, lol! ) pre-washed bagged is fine
4 cloves garlic, minced
1/2 onion, sliced thin
1/4 cup olive oil
1 tbsp extra virgin olive oil
3 tbsp cooking sherry
2 tbsp abstract spice
1In a large pan, heat olive oil on med/high heat.
2Add onions and garlic, sautéing for approximately 2 minutes until onions are translucent. Do NOT burn garlic.
3Add in greens, 2 cups at a time adding 1 tbsp of Abstract Spice after each 2 cups. *Cook down each 2 cups before adding the second 2 cups.
4Stir in sherry turning heat down to low.
5Lastly, drizzle extra virgin olive on to greens and simmer on low for an additional 2 minutes and serve.
