All the flavor of the beloved Girl Scout cookie without the sugar, carbs, and guilt. Coconut, chocolate, and caramel come together in this healthy but decadent treat, snack, or dessert.

3 tablespoons coconut oil
2 tablespoons maple syrup
2 cups gluten-free oats
1 cup gluten-free chex (honey nut is my fav) or more oats
2 cups unsweetened coconut flakes
1/2 cup macadamia nuts (if they're already roasted, add them at the end with the chocolate chips)
1 teaspoon vanilla
dash of salt
1/4 cup dark chocolate chips (i love enjoy life brand)
1Preheat oven to 350.
2In a microwave-safe bowl, melt the coconut oil and maple syrup for 30 seconds or until oil is melted. Stir and add oats, chex, coconut flakes, and nuts. Stir in vanilla and dash of salt.
3Pour granola mixture onto parchment-lined baking sheet (easier clean-up). Bake for 20 minutes, stirring and baking for another 10 minutes or until golden.
4Remove from oven and cool for about five minutes before adding chocolate chips (or else it will be a mess). Stir in chocolate chips and store in airtight container for a week.
