Salt + Charm's Fluffy Buttermilk Biscuits
The fluffiest buttermilk biscuits in all the land!

4 cups unbleached all-purpose flour
8 teaspoons baking powder
1/2 teaspoon baking soda
2 1/2 teaspoons coarse kosher salt
8 tablespoons cold unsalted butter, cut into small pieces
1 1/2 - 2 cups cold whole buttermilk
1Whisk together all of the dry ingredients.
2Blend the cold butter into the dry mixture using your hands, a pastry cutter or two forks, until the mixture resembles coarse cornmeal.
3Make a well in the center of the mix and pour in the buttermilk. With your hands or a spatula, stir together the mixture until a dough forms.
4Turn the dough out onto a floured board or counter top. Roll the dough out to 3/4 inches thick and then fold like a letter. Roll it out again to 3/4 inches thick and cut with a large biscuit cutter. Place the biscuits on a parchment lined baking sheet, almost touching. Gather together the remaining dough and roll out again to get several more biscuits.
5Bake for 15-20 minutes, until they have risen and the tops have begun to brown. Brush with melted butter if you like!
