slice of bread
1 tablespoon cream cheese
1/2 ounce (or one thin slice) of smoked salmon
1 egg two handfuls of raw spinach
1 teaspoon butter
salt/pepper to taste
1Place bread slice on plate. Spread cream cheese on bread. Top with slice of smoked salmon.
2Heat approximately 2" of water in a shallow pan over high heat.
3Meanwhile, melt butter in saute pan over medium heat and add spinach. Saute for approximately 3-4 minutes or until wilted. Remove from heat.
4Break egg into small bowl, using care not to break the yolk. When small bubbles appear in water filled pan, slide the egg out of the bowl into the bubbling water.
5Turn heat back and allow to simmer for a few minutes until the egg white is no longer translucent. This may take up to five minutes, depending on the temperature of your water.
6When finished, add spinach to bread stack and use a slotted spoon to gently remove the egg from the pan and top your bread.
7Salt/pepper to taste.
