Salmon Burger Recipe

2 - 2 1/2 cans boneless, skinless wild caught salmon (i like trader joe's or wild planet! )
1/2 large or 1 small lemon, juiced
2 tablespoons scallions
2 tablespoons cilantro or parsley
1 teaspoon paprika
salt & pepper to taste (i love himalayan pink salt! )
1 tablespoon dijon mustard
1/2 cup panko bread crumbs (can also use gluten free or almond flour)
1Turn oven to broil on high and line baking sheet with parchment paper (I like the If You Care brand because it's unbleached and chlorine free!)
2Drain water from salmon and add to medium-sized bowl with remaining ingredients and combine. (I find using my hands works best)
3Form mixture into 4 patties (add more breadcrumbs or lemon juice, if needed).
4Place on parchment paper and cook on broil for ~10 minutes until golden and crisp.
5Serve with roasted sweet potato "fries" & your favorite veggie, over greens or on a whole grain or sprouted bun. I love spreading Sir Kensington's sriracha mayo on top!
*Patties may break apart, this is okay, just be careful not to flip them before they are finished cooking.
