These S'mores Bars are a quick and easy treat and best served warm from the oven!

8 - 10 digestive biscuits
110 g caster sugar
275 g plain flour
225 g butter, melted
250 g chocolate chips
100 g mini marshmallows
1Preheat the oven to 180 C. Grease a rectangular traybake tin and line with baking paper
2Place the digestive biscuits in a sandwich bag and crush with a rolling pin
3Melt the butter in a heatproof bowl. In a bowl, mix together the sugar, flour and digestive biscuits. Add the melted butter and combine.
4Press the mixture into the traybake tin and bake in the oven for 15 minutes.
5Remove the tray but keep the oven on. Pour the chocolate chips onto the biscuit mix and place back in the oven for three minutes.
6Remove the mixture from the oven and, using a knife, spread the melted chocolate so it is even.
7Turn on the grill (heat from above) to medium-low heat. Sprinkle the marshmallows over the chocolate mixture and put under the grill for 1-2 minutes. Remove when the tops of the marshmallows have browned but keep watching closely as this happens quickly.
8Leave to cool before cutting into slices and serving warm.
Using the grill for the marshmallows as opposed to the oven is because the grill heats from above which is the key to browning the marshmallows.
