Root Beer Braised Beef Shank With Polenta
A slightly sweet, root BEER braised beef shank served with polenta.

lbs beef shank
14 .5 oz. can whole peeled tomatoes, diced
14 oz. beef broth
12 oz. not your father's root beer
medium onion, diced
1 tsp garlic salt
1/2 tbsp garlic, minced
2 tbsp olive oil
1 tsp thyme
1 tbsp rosemary
2 cups corn grits
6 cups water
1Add olive oil to a heavy stock pot or dutch oven on medium heat.
2Dust beef shanks with garlic salt, thyme, rosemary and pepper.
3Sear on each sides for a few minutes, just until they darken and get a crust.
4Remove shanks from pot.
5Add onion and cook until translucent.
6Add shanks back to pot.
7Add root beer, tomatoes and broth.
8Bring to a simmer and cook uncovered for 1-1/2 to 2 hours, until meat is tender and liquid has reduced and thickened.
9About 1/2 hour before meat is finished, prepare polenta.
10Boil water with a dash of salt.
11Add corn grits and stir.
12Stir about every five minutes as it thickens.
13Add more water if needed.
14It is finished when soft.
