Rolled Gingerbread Cookies
These cookies are perfect to decorate for the holidays. One tip for getting a smooth roll for cutting is to put a piece of plastic wrap over the dough as you roll it out.

1/2 c shortening
1/2 c butter
1 c granulated sugar
1 egg 1/2 c molasses
1/2 c honey
2 t apple cider vinegar
1 1/2 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
1 tsp cinnamon
1 tsp ground cloves
1Cream together the shortening, butter and sugar. Beat in the egg, molasses, honey and vinegar. Sift in the dry ingredients and mix together. Chill for 1 hour.
2Roll the dough 1/4" thick on a very lightly floured surface. Cut into shapes and place on parchment paper on a baking sheet. Bake at 375 degrees for 12 minutes. Makes about 5 dozen.
The number of cookies depends on the size of your cutters. If the dough is too crumbly when you pull it out to roll it, add a couple T of water.
