Roasted Sweet Potatoes W/ Honey, Blue Cheese & Sage
Helping to add a kick to your Thanksgiving table, this mildly sweet root vegetable is amped up with sweet local honey, a bit of sharp creaminess from the pungent blue cheese crumbles, and all balanced out with the subtle earthiness from the ground sage herb.

preheat oven to 400
2 large sweet potatoes, washed
1/2 cup blue cheese crumbles
2 tbsp local honey
1 tsp ground sage
1/4 cup green onions/scallions (only the green)
1 tbsp abstract spice
2 tbsp olive oil
1Roast sweet potatoes for approximately 30 minutes until tender to the squeeze.
2Remove from oven and set aside. Heat oven to broil.
3Slice potatoes into 1/2 inch rounds and lay flat on baking pan.
4Drizzle with oil and season with Abstract Spice.
5Sprinkle on sage.
6Top with blue cheese crumbles and green onions.
7Broil for approximately 5 minutes or until cheese is browning.
8Remove from heat and drizzle with honey.
9Add fresh cracked pepper and additional green onions if desired.
