Roasted Shrimp & Feta Quinoa, Thm E

1/2 - 2 1/2 lbs shrimp, peeled and deveined (i used 1 1/2lbs jumbo shrimp, but any size will do. if the shrimp are smaller, you'll need more towards 2lbs. )
2 - 3 cups cooked quinoa
2 juice of lemons
1 english cucumber, seeded and diced
1/4 c finely diced red onion
4 - 5 sprigs fresh dill, roughly chopped
1/2 small bunch of parsley, chopped
4 scallions, whites and green parts, sliced
2 tbsp crumbled feta cheese
salt and pepper
1Preheat oven to 400.
2Spread shrimp onto a large baking sheet, spritz with coconut oil spray, and season with salt and pepper. Toss to combine, then roast at 400 for about 6 minutes
3In a large bowl, combine the cooked quinoa with all other ingredients. Give it a big toss, taste for seasoning, and serve.
