Roasted Red Pepper And Lentil Soup

Flavorful, creamy soup. The addition of lentils adds fiber and protein for increased satiety. Pairs well with naan bread, oyster crackers, or Trader Joe's cracker assortment.

Main Ingredients

1 cup of dried green lentils, rinsed

1 cup chicken broth*

1 cup water

1 box of trader joe's roasted red pepper and tomato soup

1 jar of trader joe's roasted red peppers, chopped

1 small yellow or sweet onion, diced

3 cloves of garlic, minced

1/4 teaspoon smoked paprika

salt and black pepper to taste

green onion for garnish


1Combine lentils, chicken broth, water, onion, and garlic in 4-quart pot and bring to a boil.

2Simmer with top on over low heat for 20 minutes.

3Add box of TJ's Roasted Red Pepper and Tomato Soup along with chopped red peppers.

4Add 1/4 teaspoon smoked paprika and salt & pepper to taste.

5Simmer for additional 25 minutes.

6Serve hot, garnished with green onion.

Additional Notes

*Could substitute vegetable broth.
