Roasted Okra {paleo, Vegan}

Crunchy and crispy pods of okra, sans the fuss and mess of breading and frying. This simple summer side is a healthy and easier alternative to fried okra. Only 4 ingredients and half an hour are all ya need to make these tasty veggies.

Main Ingredients

4 cups okra

2 teaspoons melted fat (duck fat, coconut oil, avocado oil)

1/2 teaspoon creole seasoning (or a combination of salt, chili powder, garlic powder, and black pepper)

Preparation

1Preheat the oven to 400.

2Trim the stem off of the okra pods.

3Using a silicone basting brush, brush a foil-lined baking sheet with a little cooking fat. Arrange okra on the sheet so they are not overlapping, or else they will steam instead of roast.

4Brush them with remaining cooking fat, reserving a little to brush on halfway through. Sprinkle with seasoning salt.

5Roast for 20 minutes. Increase oven temperature to 425, brush with a little more oil if they look too dry, roll them over so their opposite sides get a little tan, and roast for 10 more minutes.

6Serve immediately.
