Roasted Garlic Tomato Soup

Pre-heat your oven to 400 degrees. On a sheet pan, spread out your onion, garlic, basil and tomatoes. Drizzle the avocado over the top. Season with your salt a pepper. Roast everything for about 25-30 minutes until onions and tomatoes are soft. Pour ingredients into a blender and puree! Drizzle a little avocado oil and a swirl of coconut cream before serving. Serve with grilled cheese sandwiches.

4 - 5 garlic pods

3 basil leaves

pinch of sea salt

pinch of black pepper

2 tablespoons of avocado oil
