Roasted Garlic Sweet Potatoes

Main Ingredients

2 sweet potatoes ( i used organic)

2 tblspoon avocado oil

1 tblspoon garlic powder

1 tsp smoked paprika

1/2 tsp ground black pepper or to taste

1/2 tsp salt ( i used himalayan pink salt) or to taste

Preparation

1Preheat oven to 400 degrees

2Wash sweet potatoes thoroughly and towel dry

3Cut 1 sweet potato in half horizontally. Take each half and cut long ways (hot dog style). Chop sweet potatoes in thin wedges. Repeat for the other potato.

4Once your sweet potatoes are cut into thin wedges, place in a large mixing bowl.

5Pour avocado oil to coat the potatoes. Add in garlic, smoked paprika, salt and pepper.

6Mix sweet potato, oil and spices together and cover evenly.

7Spray baking sheet with non stick spray.

8Put sweet potatoes on baking sheet in one even layer.

9Bake in oven for 15 minutes. Take out of oven and flip potatoes over and bake for 15 more minutes or until golden brown and desired texture.
