This zesty dish makes a great addition to a spring BBQ!

1 cup rhubarb
1/4 red bell pepper, chopped
1/4 green bell pepper, chopped
1/4 cup fresh cilantro, chopped
1 green onion stock, chopped
1/2 jalapeno (or a whole one if you love spicy)
1 tbsp lime juice
1 tbsp brown sugar
salt and pepper to taste
1Take the rhubarb and blanch.
2To blanch rhubarb, you will place it in boiling water for 10-15 seconds
3Immediately remove from heat and let cool for 1 min
4Add remaining ingredient and rhubarb into a food processor and pulse a couple of times until all the pieces are blended and chopped together.
5Allow salsa to sit in the fridge for at least an hour to let the flavors set in.
