Main Ingredients

1 tbsp sugar

1 cup rhubarb, chopped

1 cup sugar

1/2 cup margarine

2 eggs 2 tsp vanilla

1 1/2 cup flour

1 1/2 tsp baking powder

1/2 cup milk

Preparation

1Chop rhubarb and place in a bowl, sprinkle with sugar and let soak for 1 hr.

2Combine sugar and margarine. Mix until fluffy.

3Mix in eggs and vanilla.

4Combine flour and baking powder in a bowl.

5Mix flour mixture alternately with the milk.

6Strain and add rhubarb mixture.

7Mix well, pour into greased loaf pan.

8Bake for 30-45 minutes or until a toothpick comes out clean.

This recipe is delicious. I am so happy with this experiment!
