Main Ingredients

1/2 cup melted butter

1/4 cup icing sugar

1 cup flour

2 eggs

3/4 cups sugar

1/4 cup flour

1/4 tsp salt

2 cups diced rhubarb


1Preheat oven to 350. Line an 8x8 square baking pan with parchment paper.

2Melt butter in a medium saucepan. Once melted, stir in icing sugar and1 cup flour. Stir well, and press evenly into baking pan. Bake for 15 minutes.

3While the base is baking, whisk the remaining ingredients except rhubarb in the same pot (to save dishes!), folding in the rhubarb at the end.

4After the base has baked for 15 minutes, carefully remove from the oven, pour the rhubarb mixture on top, and bake for an additional 45 minutes.

5Cool, and slice into squares. Enjoy!

Additional Notes

This recipe can easily be doubled and baked in a 9x13 pan.
