Main Ingredients

shortcrust pastry or a prebaked tart shell

2 eggs 100 g caster sugar

2 teaspoons cornflour

1 tablespoon cocoa powder, plus extra for dusting

1 cup

200 ml thickened cream

1Preheat your oven to 180C/355F.

2Prepare your pie dish with your pastry, place a sheet of baking paper over the top and fill with rice or baking weights. Bake your pastry shell for 8 minutes, remove the weights and baking paper and bake for a further 5 minutes or until dry. Allow your pie shell to cool for 15 minutes. (If using a premade shell, skip this step).

3Place eggs and sugar in a bowl and sift in the cornflour and cocoa powder. Gently whisk together until combined.

4Add the wine and cream. Stir until combined.

5Pour your filling mixture into your prepared tart case.

6Bake your tart for 20-25 minutes or until just set. Allow to cool slightly before dusting with cocoa and serving either alone or with whipped cream, thickened cream or ice cream.
