Red Velvet Cake Smoothie
This recipe is loaded with potassium and superfoods, but tastes like dessert, with beets being the star of the show. Pre-roast the beets prior to making this by wrapping them in aluminum foil, drizzling with oil and roasting at 375 degrees for about an hour. Peel, chop, and store in refrigerator or freezer until ready to make recipe!

1/2 cup roasted beets, chopped and chilled or frozen
2 tbsp cacao powder
1 scoop collagen powder (i used the vital proteins brand)
1 tbsp chia seeds
1 date, pitted
1 cup cashew milk
siggi's yogurt as the base and top
1Blend all the ingredients together in a high-speed blender for about 1 minute.
2Scoop a few spoonfuls of Siggi's yogurt into the bottom of a mason jar, pour the smoothie mixture to the top of the jar and then dollop another spoonful of yogurt on top.
