Red Crusty Potatoes With Lemon Tahini Dressing
The potato. The simple... yet versatile little beauty that can make all your side dish wishes come true! If you want a no fail recipe for the PERFECT potato you have stumbled upon the right post. They are crusty on the outside, while the inside turns out fluffy and almost buttery. I have made potatoes like this many times and I have NEVER been disappointed! You can eat these lil guys plain, topped with a pesto, or dressing made with calcium rich tahini. Introducing: Red Crusty Potatoes topped with Lemon Tahini dressing.

for the potatoes-
approx a pound of red potatoes cleaned and cut in half length wise
1 - 2 tablespoons of olive oil
1 and 1/4 teaspoon of salt
1/2 tsp cracked black pepper
a couple of pinches of dried oregano or to taste
for the dressing:
1/4 cup tahini
2 tablespoons (more if needed to thin out) olive oil
1 juice of lemon
1 tsp garlic powder
salt and pepper to taste
1•whisk all ingredients for dressing together and place in fridge if you would like it to firm up. Not necessary, but I prefer this.
2•preheat oven to 450 and make sure you have a rack on the lowest level
3•coat the potatoes with olive, salt and pepper. I like to do this in a gallon bag
4•place on a foil lined baking sheet FLESH side down so the skin in exposed and roast for 25-30 minutes on bottom rack. The potatoes should be easily cut, but crispy on the flesh
5•top with dressing and oregano. Enjoy!
