Main Ingredients

6 eggs

1/2 c grated smoked gouda

1/4 c cream cheese

1/4 tsp salt

1/4 tsp black pepper

1/2 tsp onion powder

6 slices cooked bacon, crumbled


1Grease mini muffin tins them on a deep baking dish for a boiling water bath.

2Blend all base ingredients in a food processor until very smooth. If desire, pour the egg mixture through a fine colander or sieve to ensure smoothness.

3Put crumbled bacon into the bottom of each cup then add egg mixture.

4Pour water (at 170-180*) into baking pan to halfway up on the tin.

5Oven: Bake at 300 for about 20 minutes or until centers are set.

6Let cool before using a knife to gently remove the egg bites

Additional Notes

Completely cool bites in a silicone mini-muffin tin do not require the use of a knife and seem to preserve the shape more. To reheat: bake/broil in the oven for best effect, microwave may make them chewy.
