Recipe - Keto: Classic Chocolate Chip Cookies
Keto, low carb friendly chocolate chip cookies

1/2 cup salted butter, softened
1/4 cup swerve
1/4 cup sukrin gold
1.5 cups almond flour, natural type (i like bob's red mill)
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp xanthan gum
1 tsp vanilla extract
1 large egg
1/4 cup chocolate chips, stevia-sweetened (like lily's brand)
1/4 cup chopped pecans or nut of choice
1Preheat your oven to 350 F*.
2Cream butter and erythritol. Add the vanilla and egg, mix on low for a half of mintue.
3Mix almond flour, xanthan gum, baking powder, and salt together separately then add to liquids and mix until well combined.
4Mix in adds-ins, like chocolate chips and nuts.
5Make 24 balls with medium scoop or hands and place on a baking tray. Bake for 10 - 14 minutes until golden brown on the edges.
6At 5 minutes - check and see if cookies are flattening, if they are still ball-shaped they made need to be pressed down with fork or spoon.
7Let them cool, and serve. Keep in an airtight container.
