Real Food Taco Soup

1 tbsp olive oil
1 lb ground turkey
1 onion 2 bell peppers
2 jalapeños (seeded)
2 cloves minced garlic
1 15 oz can diced tomatoes
1 15 oz can stewed tomatoes
1 8 oz can tomato sauce
1 32 oz carton of chicken stock (or more to taste)
garnish (optional): sour cream, cilantro, avocado, tortilla chips

2Chop the onion, bell pepper, zuccini, and mince the garlic. (I like my veggie pieces to be extremely bite sized, but you do what you prefer!)
3Go ahead and mix up the taco seasoning spices (cumin, chili powder, onion powder, and garlic powder) in a small bowl so they'll be ready.
4Heat a small amount of olive oil on medium high heat in the pot and brown the ground turkey. Season with salt and pepper while browning. Drain grease and lay turkey aside on a separate plate.
5With the pot still on medium heat (and a dash of olive oil added), add the onions, bell peppers, and zuccini. Sautee just until they're starting to all get hot (remaining crispy still). Add minced garlic. Keep stirring around as you sautee, and add 2-4 TBSP of the taco spice mixture. Continue to add taco seasoning + salt and pepper to your liking.
6After the mixture is well integrated, add the cans of stewed tomatoes, diced tomatoes, tomato sauce, and chicken stock. Stir until fully combined.
7Bring to a boil, then turn the heat down to low. Let simmer for 20 minutes, stirring occasionally.
8Spoon into bowls and serve with garnishes of your choice!
9We like to top with a dollop of sour cream and some freshly cut cilantro. We also crumble in some tortilla chips. If we're feeling really festive, on occasion we will add some slices of avocado.
