Raw Zucchini Pasta With Fresh Tomato Sauce
Easy as pie... well not really!

4 medium zucchini, shaved into noodles
2 tablespoons extra virgin olive oil
3 cups cherry tomatoes
1/2 teaspoon pink himalayan salt
1/2 teaspoon black pepper
2 large cloves garlic, crushed
splash white wine
handful fresh basil leaves
1Make the zucchini noodles.
2In a blender, blend together the olive oil, tomatoes and garlic with salt and pepper.
3Heat a medium sauce pot, adding the sauce and reduce till about half. Add a splash of white wine and continue to reduce. Take off the heat and add the boil leaves.
4Compile the zucchini and sauce, serve with vegan parmesan cheese, available at LTF SHOP.
