Main Ingredients

1 zucchini

half of a medium-sized tomato

1/4 inch of fresh ginger

1 ear of corn

1 tbsp of lime juice

3 tbsp of coconut cream

salt and pepper to taste

1 - 2 tbsp of nutritional yeast

sunflower seeds

4 - 5 leaves of fresh chopped basil


1Start by removing the stem and bum of the zucchini, then peel the skin with a potato peeler.

2Continuing in that motion, create flat noodles. Stop once you reach the core on all sides. Place your noodles in a bowl.

3Shuck your corn.

4Chop your tomatoes, ginger, and basil.

5Top your noodles with the chilled coconut cream, then the chopped ingredients.

6Add lime juice.

7Season the pasta with salt, pepper, and nutritional yeast.

8Top with sunflower seeds.
