Raw Snicker Bars
Who doesn't love Snickers? I know I do! That rich creamy caramel, chocolate and peanuts! Umm... Well, now you can have all of those tantalizing tastes without the guilt! That's right! These delicious squares are made with wholesome all-natural ingredients that won't weigh in on your waistline or conscience!

For the base:
1 1/2 cups cashews
1/2 shredded coconut
8 meedjol dates pitted
3 tablespoons brown rice syrup
For the caramel:
8 medjool dates pitted
1/4 cup natural peanut butter
2 tablespoons almond milk
1 tablespoon brown rice syrup
For the topping:
1/4 cup peanuts
1/2 bar of unsweetened chocolate
1For the base: Process cashews into small pieces in a food processor. Add dates and process until roughly chopped. Then add in coconut and brown rice syrup...process until you have a sticky dough. Press mixture into a loaf pan lined with parchment paper and set in the freezer.
2For the caramel: Process date in processor until roughly chopped. Add in rest of ingredients, but adding almond milk a little bit at a time until a smooth caramel forms. Spread caramel over the base.
3For the topping: Roughly chop peanuts and then place on top of the caramel, pressing down lightly. Melt your chocolate in the microwave or in a water bath on the stove, stirring every 15 seconds until completely melted. Drizzle chocolate over the top of mixture. Place back in the freezer for 20-30 minutes or until hard. Remove from the freezer, cut into squares and enjoy!
