Raspberry French Toast (strata)

Debbie's favorite special breakfast. The fresh raspberries, sweetened cream cheese and powdered sugar make it as pretty as it is tasty!

Main Ingredients

2 loaves or french bread or challah or other sweet medium crusted absorbent bread.

8 oz cream cheese

1.5 cups of sugar

2 flats of raspberries

14 cup powdered sugar

15 eggs 1 cup of half and half

2 tablespoons of vanilla

1/2 cup of maple syrup

Preparation

1Spray a 10 x 12 baking pan (disposable roasting pan is great) with non-stick spray and set aside.

2Slice bread lengthwise and then into 1 inch pieces. Place them into a large mixing bowl.

3In a stand up mixer or with an electric blender, whip the cream cheese with 1/2 cup of sugar.

4In a big mixing bowl, combine eggs, half and half, maple syrup, 1 cup of sugar and vanilla and blend well with an electric or immersion blender.

5Place about 1/2 of the bread into the egg mixture to get them wet but not too soggy, and then cover the bottom of the cooking pan with the soaked bread so the bread slices overlap each other a little bit instead of laying flat.

6Using a butter knife, spread about 1/2 of the cream cheese mixture onto the bread in the pan. You may need to use your fingers and a spoon. Make little dollops and spread them around. This is the messy part (kid friendly).

7Spread about 1/2 of your raspberries in on top of the cream cheesy bread.

8Repeat the above to create a second layer of egg bread, cream cheese and raspberries.

9If you have any egg mixture, you may pour it over the bread in the pan.

10Cover in aluminum foil and place in the refrigerator overnight.

11Bake in a preheated 350 degree oven until done, 45 to 50 minutes. The finished dish should be not be wet or soggy, but it should be nice and spongy like a great French Toast.

12Sprinkle powdered sugar on top. To serve, cut into rectangles.

Additional Notes

1: The size of the pan does not have to be exact. I use a 1/2 sheet chafing dish. 2: If you need some more egg mixture because the bread was super absorbent, make a small batch of blended eggs, half and half and sugar. 3: Te great guests at the 7 Seas Inn Tahoe LOVE this breakfast strata.
