Main Ingredients

2 - 2 1/2 cups cooked rice

4 chicken breast pieces, diced

1 tbsp turmeric powder

1 1/2 - 2 tsp cumin powder (taste to adjust)

1 small tomatoes, diced (plus small extra if desired)

1 - 1 1/4 cup green peas

purple cabbage, shredded as per desired

1 avocado, sliced or cubed.

2 juice of lemons, divided

salt and pepper to taste

chili powder (as desired)

4 tbsp olive oil

1 medium onion, diced (optional)

2 cloves garlic

Preparation

1Cook rice.

3Then, add cabbage and peas and let cook for 3-4 minutes.

4Add cooked rice and spices and stir till mixed well.

5Add a little water if it starts to get too dry. Then, add tomatoes and salt and pepper and cover with lid, at low heat, stirring every 2 minutes, for about 5-8 minutes.

6When cooked, taste and adjust. Serve with freshly cut avocado and lime on the side.

7You can add fresh tomatoes if you wish. Enjoy!

Additional Notes

Add some broth if you wish to add some more flavour to your meal. For vegetarian/vegan option- use beans and/or tofu.
