Quinoa was all the rage for a while., then it was swiftly replaced with cauliflower...but now, quinoa is making a come-back, in a big way! This crust can be used for sweet or savoury toppings, and will make you shake your head at the thought that its simply quinoa.

3/4 cup uncooked quinoa
1/4 cup water (plus more for soaking quinoa overnight)
1 tsp baking powder
1/4 tsp salt
1Soak the quinoa in water in a small bowl for a minimum of 8 hours (or overnight).
2Drain and rinse thoroughly.
3Preheat the oven to 425 degrees F.
4Prepare a 9-inch round baking dish with parchment paper, then spray parchment paper with cooking spray.
5Mix the quinoa, 1/4 cup of water, baking powder and salt in the bowl of a food processor. Process until smooth, approximately 2 minutes (scraping the sides of the food processor when/as necessary).
6Pour quinoa batter into prepared dish, smooth batter.
7Bake for 15 minutes, until just golden brown.
8Remove from oven. Carefully turn over the crust and remove the parchment from underneath, replace in baking dish on the opposite side.
9Bake for an additional 5-10 minutes, until the edges are crispy.
10Remove from oven, top as desired, and bake as necessary.
