Quick Paleo Protein Pancakes

Eating a stack of pancakes doesn't have to leave you feeling like you immediately need a nap. These protein pancakes can be whipped up in under 5 minutes, leave you full and fueled for whatever your day has ahead of you. No guilt, all goodness.

Main Ingredients

1 scoop protein powder, any flavor

1 egg,

1 t. almond milk (or milk of your preference)

1/2 t. vanilla extract (optional)

1/8 t. baking powder

Preparation

1Warm skillet on medium-low heat while you take two minutes to combine your ingredients.

2In medium bowl, combine ingredients with whisk (or fork) until combined. Mixture will be thin*.

3Grease skillet with coconut oil** to cover surface. Pour in pancake batter into desired sized pancakes (one large, two medium, or three small depending on your mood).

4Once small bubbles form on the surface of the pancakes (1-2 minutes), flip those little buddies over. Cook for another 1-2 minutes until desired shade of golden brown.

5Slide your pancakes onto a plate and serve with whatever you like-- bananas, berries, coconut, nut butter, or whatever your heart desires!

Additional Notes

*Depending on your protein powder, you may need to tweak your liquids. **This is my preferred cooking oil for pancakes, but butter or ghee would be fabulous, too.
