Quick Ghana Style Eggs
Quick Ghanaian style breakfast eggs.

2 - 3 eggs
1 tbsp olive oil
salt and pepper to taste ( i used onion salt but any salt will do)
a thick slice of sourdough bread (optional)
1To begin, deseed and chop the tomatoes, chilli (I like to keep the seeds in) and slice the onion finely.
2Crack the eggs into a bowl and add some pepper, chilli and then whisk.
3Heat the oil in a pan, and then add the onions. When the onions begin to soften, add the tomatoes and stir for 1 minute or until the tomatoes begin to break down.
4Add the whisked eggs,
5When the eggs have reached a consistency similar to scrambled eggs, turn off the pan and add some salt to taste.
6(Optional) Toast and butter the sourdough bread* Serve Immediately.
*This is normally served with fresh 'butter bread', which i've substituted here for sourdough bread.
