Pumpkin Spiced Pb Cookie Dough Bites

In a bowl, mix all dry ingredients (except chocolate chips and pecans) till uniformly incorporated. Then, add your wet ingredients, adding your sweetener and toppings last. Mix till a soft and slightly moist dough consistency is formed. Roll into small balls. You will get around 16 - 20. Cool in the fridge for about 30 mins or leave in there till you're feeling snacky! Main Ingredients

1/4 - 1/3 cup oat flour

1 cup protein powder (or oat flour)

1 1/2 - 2 tbsp pumpkin spice flavour

pinch of cinnamon and nutmeg

1/3 cup peanut butter (non-stirred)

4 tbsp pumpkin puree

1/2 tsp vanilla extract

1/2 tbsp almond milk

1/4 - 1/3 cup maple syrup (or other natural sweetener)

1/3 - 1/2 cup vegan dark chocolate chips

2 - 3 tbsp crushed pecans (optional, but delicious)

Preparation

1In a bowl, mix all dry ingredients (except chocolate chips and pecans) till uniformly incorporated.

2Then, add your wet ingredients, adding your sweetener and toppings last.

3Mix till a soft and slightly moist dough consistency is formed.

4Roll into small balls. You will get around 16 - 20.

5Cool in the fridge for about 30 mins or leave in there till you're feeling snacky!

6Lasts up to a week in the refrigerator.

Additional Notes

If your dough is a bit too dry, you can add in a splash of almond milk. If you want it a bit sweeter, add a drizzle of syrup. If too wet, add in a little bit of flour.
