Put it all in a pot.  Simmer 1 hour.  Purée.  Garnish with sour cream and chipotle smoke salt roasted hull less pumpkin seeds. (Toss the seeds in oil, chipotle powder, and smoked salt.  300F for 20 min)

1 med. onion

1 carrot

2 yukon gold potatoes

2 cloves garlic

2 tablespoons fresh thyme

salt and pepper

for garnish:

sour cream

pumpkin seeds
