Pumpkin Sausage Soup-keto Friendly!

This soup is tasty and comforting! It is also low carb so it works great on a Keto diet.

Main Ingredients

1 lb . pork sausage tube (a breakfast sausage)

1 small turnip (peeled and cubed)

1 bag frozen cauliflower rice

1 - 15 oz can pumpkin puree

4 c. chicken broth

3 c. water

2 t. apple cider vinegar

1 tsp. garlic powder

chopped bunch of green onions

1 tsp. onion powder

1 t. chopped fresh sage

1/4 tsp. pepper

2 tsp. salt

1/4 tsp. nutmeg

8 oz mascarpone cheese

Preparation

1In a large soup pot, brown the sausage and add the onions and turnip to the mix and saute slightly to begin to soften the turnip.

2Add the pumpkin puree, chicken broth, water and vinegar. Mixt together well.

3Add all of the spices to the mix and stir well.

4Next, mix in the cauliflower rice and stir everything all together.

5When the mixture is very hot, add the mascarpone cheese and stir until melted.

6Allow to simmer for about 30 min. before serving.

Additional Notes

I haven't tried this with italian sausage yet, but I think it would be good!
