Pumpkin Rx Bars
Just like the store bough originals, these homemade Pumpkin RX bars require only a few wholesome ingredients and about 2 minutes of food processor action. No sugar. No preservatives. No soy. No dairy. No gluten. Just portable pumpkin protein goodness.

1 cup cashews
1 cup almonds
1/2 cup dates
1/2 cup prunes
3/4 cup canned pumpkin
1 cup shredded, unsweetened coconut
2 teaspoons cinnamon
dash of ginger, clove, and salt
1/2 cup unflavored protein powder (i recommend eggwhite or gelatin)
1Process nuts a food processor or Vitamix until powdery. Pour out and set aside.
2Mix dates, prunes, pumpkin, and coconut until pasty. Add spices and protein powder, mixing until well combined. Pour back in nuts and mix until a thick paste forms.
3Press into a parchment-lined loaf pan and chill until ready to serve.
4Store in an airtight container in the fridge for 10-14 days or freeze for up to 3 months.
