Main Ingredients

1 15 oz can pumpkin

1 egg 1 tbsp coconut oil

1/2 cup butter

1/2 cup sugar

1 and 1/4 cup brown sugar

1 tsp vanilla

2 cups flour

1 and 1/2 cup oatmeal

1 tsp salt

1 tsp baking soda

1 tsp pumpkin spice

1/2 tsp cinnamon

2 tbsp flax seed

2 tbsp brewer's yeast

1 12 oz bag chocolate chips


1preheat oven to 350 degrees Fahrenheit

2mix together butter, egg, vanilla, pumpkin, coconut oil, and sugars on medium speed

3add in all dry ingredients and mix on medium

4stir in chocolate chips

5use a cookie scoop to drop onto cookie sheet

6bake in oven for 10-12 minutes

7place on rack to cool

Additional Notes

I use Bob Red Mill's quick cook Steel cut oats. Old Fashioned oats would also work great in this recipe.
