Pumpkin Cookies

Preheat the oven to 325 degrees. ​In a large bowl, cream the butter and sugars together until light and fluffy. Add the eggs, one at a time. Add the pumpkin and vanilla and combine. Main Ingredients

1/2 cup brown sugar

2 eggs 1 cup pumpkin puree

1 teaspoon vanilla

3 cups flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1 1/2 teaspoons pumpkin pie spice

Preparation

5Drop by spoonfuls onto a parchment lined baking sheet.

6​Bake for 12-14 minutes. Let cool on baking sheet for 5 minutes. Transfer to wire rack and let cool completely.

7​Frost with your favorite frosting recipe with a pinch of cinnamon and nutmeg. Add chopped walnuts if desired.
