Sweet and pumpkin spiced vegan bars!

1/2 cup spelt or oat flour, or gf flour
1/2 tsp cinnamon
1 tsp pumpkin pie spice
1 - 1 1/4 tsp baking powder
1/4 tsp salt
3 tbsp maple syrup
1/2 cup canned or cooked and pureed pumpkin
2 tbsp almond/coconut or non dairy milk of choice
2 tbsp coconut oil
1/2 tsp pure vanilla extract
1In a bowl, combine dry ingredients, then add in the wet ingredients. Mix well. The batter should be a thick-ish liquid and not very runny.
2Preheat oven to 350 F. Spread parchment paper on a 7x5 tray and spray a very light layer or coconut oil (or double the recipe for an 8×8).
3Spread the batter, not too thick and not too thin and let bake for 14-15 minutes.
4To check if done, stick a toothpick or thin fork in to see if it comes out clean. If not, bake for a minute or two more till it comes out clean. Let the pan cool for at least ten minutes before cutting or frosting the squares.
5Melt vegan, dark or milk chocolate in a pot and using a spatula or the back of a spoon, spread some on each bar to enjoy.
You can add some more pumpkin spice to your mix, if you prefer a stronger flavor. The flavor does intensify the next day though.
