Pumpkin Banana Pancakes

If you don't have oat flour, pulse oats to make oat flour. Then combine wet ingredients until well-combined. Add dry until well combined. Cook 1/4 cup of batter on a coconut oil sprayed skillet on medium heat about 2 minutes each side, until the sides start to bubble and pancake looks cooked through. Top with nut butter, yogurt, and/or 1/4 cup more chopped banana!

6 tbsp pumpkin puree

2 tbsp of vanilla protein

1/4 cup coconut flour

1/4 cup oat flour (or grind oats in food processor)

1 egg (can add an egg white as well for less dense pancakes)

1 cup almond milk

1 tsp baking soda

cinnamon, nutmeg, vanilla extract to taste
