Pumpkin Apple Muffins

This recipe is from my dear cousin Sarah who graciously shared this recipe after falling in love with these muffins long ago. Since then I have made these recipes EVERY Fall season and have created a Fall tradition with my family by doing so.

Main Ingredients

1 2/3 cup of all purpose flour

1 tbsp. pumpkin pie spice

1/4 tsp. baking powder

1 cup of sugar (or whatever sweetener you prefer)

1 tsp. baking soda

1/4 tsp salt

1 can of pumpkin

2 large eggs (lightly beaten)

1/2 cup butter; melted

Preparation

1Combine 1st six ingredients.

2Make well in enter of mixture.

3Combine pumpkin, butter, and egg in a separate bowl.

4Add pumpkin, butter, and egg to dry ingredients.

5Stir until just moistened.

6Fold in chopped apples.

7Spoon into greased muffin pans. Fill 2/3 full.

8Bake @ 350 degrees for 20 mins. Remove muffins immediately and place on cooling rack.

9Makes about 24 muffins.

Additional Notes

If you would like to make this a more healthier muffin you can substitute whole wheat flour for all-purpose. You can substitute applesauce for sugar. They're are many ways to make this a healthier option.
