Main Ingredients

2 pork spareribs (about 8 oz. of meat)

1/2 tbsp. butter

1/2 tbsp. flour (gluten-free if necessary)

2 cups nonfat milk

2 cups shredded reduced fat cheddar cheese

1 tbsp. barbeque sauce

1 box (1 lb. ) pasta (i used gluten-free elbows)

Preparation

1Cook pork ribs using your preferred method. I like to put them on the George Foreman grill and forget about them for a bit, but they could be cooked in the oven or on the stovetop as well.

2While the pork ribs are cooking, cook the pasta according to the package directions.

3When the pasta is 3-5 minutes from done, begin to make the sauce. Heat the butter and flour in a pot over medium heat to make a roux.

4Add milk and gently stir as it thickens.

5Mix in cheese and barbeque sauce.

6Leave the cheese sauce over low heat and cut the pork ribs into small bite-sized pieces. Then, mix the pork and pasta in with the cheese sauce.

7Serve and enjoy!
