This recipe is super easy and very quick. This is a great go to when you have to make a quick dinner for the kids or you had a late night at work and need something fast. My husband is a huge fan of this (I think because he loves peanut butter so much). Great gourmet recipe that takes just minutes to execute! Enjoy!

Egg Roll Bowl

2 tbsp coconut oil

1 tbsp minced garlic

1 .5 lbs group pork

1/2 cup creamy peanut butter

1/4 cup asian sesame ginger dressing

1 head green leaf lettuce

1/2 cup shredded carrots

1/3 cup chopped fresh cilantro (optional)

salt and pepper to taste


1Heat oil in large skillet over medium heat. Add garlic, pork and salt & pepper.

2Cook 8 minutes or until pork is crumbled and no longer pink.

3While pork is cooking whisk together peanut butter and dressing.

4Divide pork evenly among lettuce leaves and drizzle with peanut sauce.

5Top with carrots and cilantro.
