Plantain Protein Waffles

Preheat waffle maker. Grease if necessary. Peel plantain and using your hands, rip into large chunks. Place banana pieces into your blender. Main Ingredients

7 ounces , 1 medium, ripe plantain

4 eggs 1 1/2 tbsp coconut oil

1/4 cup protein powder (i used vanilla)

1/4 tsp cinnamon

1/8 tsp cloves

Preparation

1Preheat waffle maker. Grease if necessary.

2Peel plantain and using your hands, rip into large chunks. Place banana pieces into your blender.

3Add in cracked eggs, coconut oil, protein powder, and spices (if you opt to use them).

4Put the lid on the blender and blend on high until smooth.

5Once mixture is smooth, then pour batter into waffle iron, as directed by your waffle maker's manufacturer, being careful not to overfill your waffle maker. Allow batter to cook per your maker's instructions until your desired degree of doneness. Remove cooked waffle from iron and allow it to cool on a wire rack. Repeat with remaining batter.

6Once cool, serve as desired.
