Main Ingredients

3 plantains (green/not ripe)

1 teaspoon red pepper flakes

1/2 teaspoon salt

1/2 teaspoon paprika

1/4 teaspoon garlic powder

1/4 cup melted coconut oil (for skillet, one tablespoon per batch)

1Slice plantains into very thin (less than 1/4 inch) circles. If you have a mandoline, use that (but be very careful!).

2Place all sliced circles into a bowl and toss with red pepper flakes, salt, paprika, and garlic powder.

3Place skillet on medium-high heat and grease skillet with about one tablespoon of melted coconut oil. Place each circle on the pan to where they are not touching. Let cook for about 5 minutes on one side. Flip and let cook for about 3 minutes on the other side.

4Let cool on a paper towel lined plate.

Additional Notes

The thinner you can get the circles, the better - for crisp chips. Otherwise, they may be slightly on the softer side.
