Main Ingredients

1 cup shelled pistachios (i highly recommend you buy these. i shelled my own and it took roughly a bajillion years+resulted in some t

1 cup almonds

1 cup pitted dates

1 cup dried berries (i used a mixture of cherries, blueberries, and cranberries)

1/2 cup dried coconut

1 zest and juice of lime

splash of vanilla

dash of salt


1Pulse pistachios and almonds into a fine crumble in your food-processor or Vitamix.

2Add your dates, dried berries and coconut, pulsing until a sticky dough comes together. If it appears too dry, add more dried fruit (anything will work).

3Before assembling, add your zest, lime juice, vanilla, and salt to taste.

4Roll into one-inch sized balls and store in an air-tight container for up to two weeks in the fridge.

Additional Notes

No lime on hand? Feel free to substitute orange or lemon juice and zest for a similar bright, fresh flavor.
