Pineapple Ginger- Glazed Carrots

A burst of tropic flavor. Unlike your average glazed carrots, this recipe offers a bright addition to a spicy dish like Jerk Chicken. This is a very easy and quick fix so its great if you need to make in a hurry.

Main Ingredients

5 - 6 carrots sliced

1 tablespoon butter

1 tablespoon coconut oil

1 teaspoon minced ginger

1/2 cup pineapple juice

1/2 tablespoon brown sugar

1/4 teaspoon nutmeg

1 tablespoon preserve of choice

for almond crumble

1/2 cup almonds sliced

1/4 cup brown sugar


1Make the candied almonds by stirring together about 1/2 cup sliced almonds and about 1/4 cup sugar.

2In a medium saucepan heat the butter over medium heat until melted, then add coconut oil and ginger, stir for about 30 seconds

3Add carrots and a pinch of salt and sauté over medium-high heat for 5 minutes stirring occasionally or until slightly brown

4Stir in the pineapple juice, sugar and nutmeg. Bring to a boil. Once boiling turn heat to medium and let cook for 5 minutes or until it has slightly thickened

5Remove from heat and mix in preserves Serve warm top with almonds and or parsley
