Easy Instant Pot Yogurt

1/2 gallon of phillips family family farm's fresh, raw milk
1/4 cup plain yogurt with active cultures
1 - 2 tsp vanilla (optional)
1Place milk in the Instant Pot.
2Press the Yogurt button.
3Press Adjust until you reach the boil option.
4After the boil cycle completes, check the temperature to confirm that the milk is at least 180 degrees. If it is not, use the Saute option, stirring constantly, until it reaches the desired temperature.
5Unplug the Instant Pot and cool to 115 degrees. TIP! Place the pot of milk in an ice bath in your sink to bring it down to temperature faster. Watch it closely as it cools quickly!
6Once cooled, mix in yogurt starter and vanilla using an immersion blender to blend thoroughly.
7Press the Yogurt button and set to incubate for 8 hours.
8Cover and cool the yogurt for at least an hour in the refrigerator prior to straining.
9Pour into a yogurt strainer, if desired, and strain until it reaches the desired consistency. Optional: Return yogurt to the pot and use an immersion blender to blend to an even consistency as the yogurt nearest the strainer edges will be firmer than the middle.
10Ladle yogurt into jars and refrigerate. TIP! Freeze 1/4 cup yogurt to use as a starter for your next batch. Thaw before using.
